Ingredients
1000 gr | Powdered sugar |
2000 gr | Soft butter |
20 gr | Fine salt |
200 gr | Egg yolks |
2500 gr | Weak flour |
325 gr | Corn starch |
100 gr | Fat-Reduced Cocoa Powder 10/12 |
100 gr | Concentrated coffee |
Method
Mix powdered sugar and soft butter, salt and Concentrated Coffee without whipping.
Slowly add the eggs yolks and mix to obtain a homogeneous mixture.
Add the powders mixed together (flour-starch- Fat-Reduced Cocoa powder 10/12), as soon as they are absorbed, switch off the machine.
Preparation
Make 3 cm diameter cylinders and place them on baking paper and let them harden in the fridge. As soon as they get hard, brush with egg whites and pass them in brown sugar, cut to a thickness of 0.5 cm.
Place on baking trays with baking paper and bake at 170°C (open valve) for 14-17 minutes.
Allow to cool down.
